Blackened Salmon with Grape Tomato Sauce

This is one of those quick and easy recipes that you should have in your repertoire to make on a busy weeknight dinner. Salmon is delicious and very versatile to prepare, it is very delicate in flavor compared to other fatty fish and has a lot of health benefits. Therefore, you should consider making this nutritional powerhouse fish a regular part of your diet.

To get the perfect blackened salmon, follow our suggestions. First, store your salmon in the refrigerator until you are ready to start the cooking process. Second, use a heavy-bottomed, non-stick pan and turn the heat to medium-high. Third, and most importantly, after you put the fish in the pan, don’t move it until it turns golden brown and forms a nice crust.

Let’s Talk Sauce

We used grape tomatoes as the main ingredient for the sauce. You can, of course, use cherry tomatoes instead of grape tomatoes. The great thing about this recipe is that we use the same pan to make the sauce. We’re going to sauté the onions and garlic until the onions become translucent. Now add the rest of the ingredients and let the sauce simmer until you get the consistency you want. We used water here, but feel free to use white wine as well. It will certainly enhance the flavor of this sauce.

Blackened Salmon With Grape Tomato Sauce

Ingredients

  • 8 oz Salmon filet
  • 1/2 cup Grape tomatoes
  • 3 Garlic cloves
  • 1 small Yellow onion finely chopped
  • 2 Scallions finely chopped
  • 1/4 cup Cilantro chopped
  • 2 pieces Sun-dried tomatoes
  • 1 Lemon
  • 2 tbsp Olive oil
  • 1 & 1/2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Herbes de Provence
  • 1/4 cup water

Instructions

  • Marinate the salmon with salt, pepper, paprika, Herbes de Provence, and olive oil to ensure the spices stick to the fish.
  • In a nonstick pan heat the olive oil over medium heat, sear the filet until golden brown for about 2 to 3 minutes on each side. It could take more or less time depending on the size and thickness of your fillet. Once cooked, set it aside covered with aluminum foil.
  • In the same pan on low heat add the garlic and onions, let them cook for about 5min before adding the rest of the ingredients.
  • Add tomatoes, scallion, sun-dried tomatoes, salt, pepper, smoked paprika, and herbes de Provence. Stir continuously so that the mixture doesn’t burn for about 10 min.
  • Add the lemon juice, cilantro and water then let it simmer for just to have a thicker sauce (the consistency is optional though).
  • Add cooked salmon filet to the sauce and serve with pasta, mashed potatoes, or steamed rice.
