This Watermelon Mojito is a perfectly refreshing and fizzy summer cocktail. All you need is some fresh mint, lime, watermelon, simple syrup, and silver rum. This delicious cocktail is our go-to drink whenever we are having a pool party or cookout. You can also prepare this without adding rum to serve as a non-alcoholic drink.

Traditionally, a mojito is served in a highball glass. First, muddle some mint leaves in the bottom of the glass with some sugar, then add rum, lime juice and fill the glass with crushed ice. Finish with club soda and more fresh mint. Nothing is more refreshing than homemade mojito made with freshly squeezed lime juice and fresh mint.

We are making this mojito a bit differently. We would like to rim the glass in salt, just like a margarita. Also, we did not use traditional highball glasses and used simple syrup instead of sugar. Of course, you could just serve it the traditional way but we prefer this way. If you are serving this mojito to a crowd then it’s ideal that you prepare simple syrup, it’ll make the whole process easy.

Let’s Make Watermelon Mojito

Here’s how we make watermelon mojito: start by preparing your serving glasses, run the lime wedge around the rim of your serving glasses and dip them in a cocktail salt or sugar. Make sure to avoid rimming the inside of the glass, or else it may unintentionally mix with the drink.

Now let’s prepare watermelon puree. Just blend some watermelon cubes in a blender and strain the juice to get rid of solids. Obviously, you can avoid straining watermelon juice. As a result, your mojito will not be as smooth. Sweet watermelon juice pairs beautifully with fresh mint and lime juice.

Now, muddle mint leaves along with freshly squeezed lime juice in the bottom of your serving glass. After that add simple syrup, and fill the glass two-thirds with ice cubes. Add silver rum and watermelon puree. Top with a club soda to fill the glass and stir well using a bar spoon or cocktail stirrer. Garnish with a sprig of mint, lime wheel, and your mojito is ready to enjoy.

Ingredients

  • 12 Fresh Mint Leaves
  • 1 oz Lime Juice
  • 1 oz Simple Syrup
  • 4 oz Silver Rum
  • 6 oz Watermelon Puree
  • Club Soda As needed
  • Ice Cubes As needed
  • Mint Sprigs For Garnish
  • Cocktail Salt or Sugar To rim your serving glasses

Instructions

  • Run the lime wedge around the rim of your serving glasses and dip them in a cocktail salt or sugar.
  • Muddle the mint leaves along with lime juice in the bottom of a glass using a muddler.
  • Add simple syrup, and fill the glass two-thirds with ice cubes.
  • Add silver rum and watermelon puree. Top with a club soda to fill the glass and stir well using a bar spoon or cocktail stirrer.
  • Garnish with a sprig of mint & lime wheel
